Xi'an
is a world's renowned historical and cultural city and has a long history
of the cooking culture. Well-known restaurants and cooks have appeared
one after another who sorted out more than 120 Tang Dyanstystyle recipes
and invented some 100 Shaanxi-style recipes, forming two cookiing styles
-the traditional and the modern. The former is characterized by he Tang
Dynasty cuisine and the latter, by the Shaanxi cuisine. The traditional
recipes include such delicacies as Roast Piglet and Chicken in Bottle
Gourd. The local flavor snacks include Steamed Bun Soaked in Mutton Soup
and the Fan-Family Cured Meat Broth. And the inventions include a Feast
of Van-Style Dumplings and Chang'anbajingyan (A Banquet of Scenes of Chang'an).
